Stuffed Peppers

Serves 4

Ingredients:
– 4 bell peppers (color of your choice)
– 1 pound ground turkey
– 1 small onion diced
– 3 cloves garlic minced
– 2 medium zucchini diced
– 2 cups fresh spinach chopped
– 1 6 oz can tomato paste
– 1 tsp cumin
– 1 tsp chili powder
– ½ tsp ground coriander
– ½ tsp cayenne pepper
– Salt & pepper to taste
– 2 Tbsp extra virgin olive oil
– Avocado, guacamole, and/or fresh cilantro for garnish

Directions:
Preheat oven to 375 degrees
Wash peppers, cut off the tops and clean the insides
Roast peppers in oven for 10-15 minutes (until their skin just starts to wrinkle)
Heat oil in a large pan
Sauté onions and garlic until softened
Add ground turkey and cook until just browned
Add zucchini, tomato paste, spices, and salt and pepper
Stir and cook for 4-5 minutes
Add spinach and cook for another 2-3 minutes
Using a spoon stuff the peppers with turkey and vegetable mixture
Return to the oven for 10 more minutes
Top with garnish of your choice and enjoy!
