Chicken à la Provençale

This recipe is great for a quick, tasty and waist-friendly week-night dinner. It requires few ingredients, very little prep and cook time, and will leave your taste buds exploding ….

Ingredients (serves 4):

  • 2 tablespoons extra virgin olive oil
  • 5 garlic cloves, minced
  • 1 pound all-natural chicken breasts
  • 1/2 pound cremini mushrooms, washed and chopped
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup mixed olives, pitted
  • 2 cups dry white wine
  • 1 tablespoon unrefined sea salt
  • 1 tablespoon ground black pepper
  • 1 tablespoon herbes de Provence
  • Fresh flat Italian parsley, for garnish

Directions:

  • Heat olive oil in a large skillet over medium heat.
  • Add the garlic, chicken, salt, pepper, and herbes de provence and sauté for about 5-7 minutes or until golden.
  • Add the mushrooms and cook for an additional 3 minutes, or until softened.
  • Add the tomatoes, olives and wine.
  • Cover and let simmer for 10-15 minutes.
  • Serve and garnish with parsley, if you wish.
