Chicken à la Provençale
This recipe is great for a quick, tasty and waist-friendly week-night dinner. It requires few ingredients, very little prep and cook time, and will leave your taste buds exploding ….
Ingredients (serves 4):
- 2 tablespoons extra virgin olive oil
- 5 garlic cloves, minced
- 1 pound all-natural chicken breasts
- 1/2 pound cremini mushrooms, washed and chopped
- 1 cup sun-dried tomatoes, chopped
- 1 cup mixed olives, pitted
- 2 cups dry white wine
- 1 tablespoon unrefined sea salt
- 1 tablespoon ground black pepper
- 1 tablespoon herbes de Provence
- Fresh flat Italian parsley, for garnish
Directions:
- Heat olive oil in a large skillet over medium heat.
- Add the garlic, chicken, salt, pepper, and herbes de provence and sauté for about 5-7 minutes or until golden.
- Add the mushrooms and cook for an additional 3 minutes, or until softened.
- Add the tomatoes, olives and wine.
- Cover and let simmer for 10-15 minutes.
- Serve and garnish with parsley, if you wish.
