Coconut Caulirice & Chili Lime Shrimp
Serves 3-4
Ingredients for caulirice:
1 15 oz bag of fresh caulirice (I get mine at Trader Joe’s) or 1 head of cauliflower “riced” in a food processor
½ can coconut milk
1 small onion diced
2 tsp cardamom
Salt & pepper to taste
1 Tbsp coconut oil
Directions for caulirice:
Heat oil in a pan and sauté onion until softened
Add caulirice, stir and cook for 1 minute
Add coconut milk, cardamom, salt & pepper
Cook on low-medium heat for about 10 min, or until all the liquid is absorbed
Ingredients for shrimp:
1 pound large frozen shrimp, cooked, peeled, deveined, and tail off (I get mine at Trader Joe’s)
1 cup lime juice
1 tsp chili powder
1 tsp cayenne pepper
1 tsp ground ginger
Salt & pepper to taste
2 Tbsp coconut oil
Fresh cilantro for garnish
Directions for shrimp:
Heat oil pan over medium-high heat
Add the shrimp and cook for 2-3 minutes
Add the juice, spices, salt & pepper
Cover and simmer for 5 minutes
Top with fresh cilantro
Serve over coconut caulirice or regular rice if you prefer
