Pumpkin Spice Baked Oatmeal Cups

(Gluten-Free, Dairy-Free & Refined Sugar-Free)

Makes 12

Ingredients:
3 cups (uncooked) old fashioned oats
1 tsp cinnamon
¼ tsp nutmeg
1 tsp baking powder
2 tsp liquid vanilla extract
¼ cup grade B maple syrup
1 cup unsweetened almond milk
2 eggs
¾ cup organic pumpkin purée
¼ cup melted virgin coconut oil

Directions:
Pre-heat oven to 350 degrees.
Combine dry ingredients in a large bowl.
In another bowl, whisk together eggs, pumpkin, maple syrup, vanilla, coconut oil, and milk until all combined.
Pour wet mixture into the dry ingredients and stir until all the oats are moistened.
Grease muffin pan with cooking spray and divide mixture evenly among the 12 cavities.
Bake for 30 min.
For a little extra fun, you can sprinkle some chocolate chips or chopped pecans into your mixture before baking.
